Ingredients

4 chicken breasts
⅓ cup flour
½ cup white wine
¼ cup lemon juice
3 tbsp capers
½ cup chicken broth
3 tbsp butter
2 tbsp olive oil
Fresh parsley

Preparation

Step 1

Pound chicken breasts to 1/2-inch thickness. Season with salt and pepper, then dredge lightly in flour.

Step 2

Pan-fry chicken in olive oil and butter for 3 minutes per side until golden. Remove and set aside.

Step 3

Deglaze the pan with white wine and lemon juice. Scrape up browned bits and add chicken broth and capers.

Step 4

Simmer sauce for 5 minutes, return chicken to the pan, and finish with butter and fresh parsley.
