400 g spaghetti
200 g guanciale or pancetta
4 egg yolks
2 whole eggs
1 cup Pecorino Romano, grated
Freshly cracked black pepper

Preparation

Step 1

Cook spaghetti in well-salted water until al dente. Reserve 1 cup pasta water.

Step 2

While pasta cooks, crisp guanciale or pancetta in a skillet until rendered.

Step 3

Whisk egg yolks, whole eggs, and Pecorino Romano together in a bowl.

Step 4

Toss hot drained pasta with rendered fat, remove from heat, and quickly stir in the egg mixture with pasta water to create a creamy sauce. Season with black pepper.
