Preparation

Step 1

Thinly slice 4 large onions. Cook slowly in butter over medium-low heat for 30 minutes until deeply caramelized.

Step 2

Add a splash of white wine or sherry to deglaze, scraping up all browned bits.

Step 3

Add beef broth, thyme, and bay leaf. Simmer for 20 minutes.

Step 4
