2 zucchini
2 bell peppers
1 red onion
3 tbsp olive oil
1 lemon
1 tsp dried oregano
2 cloves garlic
Tzatziki sauce
Pita bread

Preparation

Step 1

Cut zucchini, bell peppers, red onion, and halloumi into large chunks. Thread onto skewers alternating vegetables and cheese.

Step 2

Brush with a marinade of olive oil, lemon juice, oregano, and garlic.

Step 3

Grill over medium-high heat for 10-12 minutes, turning every 3 minutes until charred and tender.

Step 4

Serve with tzatziki and warm pita bread.
