Ingredients

1 cup farro
1 cup cherry tomatoes
1 red onion
1 cucumber, diced
1 can chickpeas
100 g feta cheese
⅓ cup Kalamata olives
3 tbsp olive oil
1 lemon
1 tsp dried oregano

Preparation

Step 1

Cook farro or bulgur wheat according to package directions. Let cool slightly.

Step 2

Roast cherry tomatoes and red onion with olive oil at 400°F for 15 minutes.

Step 3

Step 4
