Ingredients

2 lbs lamb shoulder, cubed
1 tsp cumin
1 tsp cinnamon
1 tsp ground ginger
1 tsp turmeric
2 cups chicken broth
½ cup dried apricots
⅓ cup green olives
1 preserved lemon
1 onion
3 cloves garlic
2 tbsp tomato paste
Couscous
Fresh cilantro

Preparation

Step 1

Season lamb shoulder chunks with cumin, cinnamon, ginger, and turmeric. Brown in olive oil.

Step 2

Add diced onion, garlic, and tomato paste. Cook until fragrant.

Step 3

Pour in chicken broth, add dried apricots, green olives, and preserved lemon. Bring to a simmer.

Step 4

Cover and cook at 325°F for 1.5 hours until lamb is fall-apart tender. Serve over couscous with fresh cilantro.
