Ingredients

300 g mixed mushrooms
1 ½ cups arborio rice
4 cups vegetable broth
½ cup white wine
1 shallot
¾ cup grated Parmesan
3 tbsp butter
2 tbsp olive oil
Fresh thyme

Preparation

Step 1

Sauté sliced mushrooms in butter until golden. Set aside.

Step 2

In the same pot, cook diced shallot in olive oil. Add arborio rice and toast for 2 minutes.

Step 3

Add white wine and stir until absorbed. Gradually add warm vegetable broth one ladle at a time, stirring continuously.

Step 4

When rice is creamy and al dente (about 20 minutes), fold in mushrooms, Parmesan, and a knob of butter.
