Ingredients

6 chicken thighs
1 ½ cups long-grain rice
2 ½ cups chicken broth
1 onion
3 cloves garlic
2 carrots
1 tsp paprika
1 tsp garlic powder
Fresh parsley

Preparation

Step 1

Season chicken thighs with paprika, garlic powder, salt, and pepper. Sear in a large pot until golden on both sides.

Step 2

Remove chicken. Sauté diced onion, garlic, and diced carrots. Add rice and toast 1 minute.

Step 3

Pour in chicken broth and nestle chicken on top. Bring to a boil, then reduce to a simmer.

Step 4

Cover and cook for 20 minutes until rice is tender and chicken is cooked through. Fluff and serve with fresh parsley.
