Ingredients

2 zucchini
2 bell peppers

2 tbsp herbes de Provence
Fresh basil
3 tbsp olive oil

Preparation

Step 1

Dice eggplant, zucchini, bell peppers, and tomatoes into uniform pieces.

Step 2

Sauté onion and garlic in olive oil. Add bell peppers and cook 5 minutes.

Step 3

Add eggplant, zucchini, crushed tomatoes, and herbes de Provence. Season with salt and pepper.

Step 4

Simmer covered for 40 minutes until vegetables are tender but not mushy. Finish with fresh basil and a drizzle of olive oil.
