1 ½ cups arborio rice
4 cups chicken broth
1 pinch saffron threads
½ cup white wine
1 onion, finely diced
¾ cup Parmesan, grated
4 tbsp butter

Preparation

Step 1

Warm chicken broth with saffron threads and let steep for 10 minutes.

Step 2

Sauté finely diced onion in butter until translucent. Add arborio rice and toast for 2 minutes.

Step 3

Add white wine and stir until absorbed. Gradually ladle in saffron broth, stirring continuously for 18-20 minutes.

Step 4

When rice is creamy and al dente, remove from heat and stir in Parmesan and a final knob of butter.
