Ingredients

1 can crushed tomatoes
6 eggs
1 onion
1 red bell pepper
3 cloves garlic
1 tsp cumin
1 tsp paprika
¼ tsp cayenne
100 g feta cheese
Fresh cilantro
Fresh parsley
Crusty bread

Preparation

Step 1

Sauté diced onion, bell pepper, and garlic in olive oil until softened.

Step 2

Add crushed tomatoes, cumin, paprika, and cayenne. Simmer for 10 minutes until thickened.

Step 3

Make wells in the sauce and crack eggs into them. Cover and cook until whites are set but yolks are still runny.

Step 4

Crumble feta on top, garnish with fresh cilantro and parsley. Serve with crusty bread.
