6 cups beef broth
300 g rice noodles
200 g beef sirloin
1 onion
2-inch ginger piece
2 star anise
1 cinnamon stick
3 cloves
2 tbsp fish sauce
Bean sprouts
Thai basil
Lime wedges
Hoisin sauce
Sriracha

Preparation

Step 1

Char onion and ginger under the broiler. Simmer beef broth with star anise, cinnamon stick, cloves, fish sauce, and charred aromatics for 30 minutes.

Step 2

Cook rice noodles according to package directions and divide among bowls.

Step 3

Slice beef sirloin paper-thin and arrange raw on top of noodles.

Step 4

Ladle boiling broth over beef to cook it. Serve with bean sprouts, Thai basil, lime, and hoisin.
