200 g shrimp
200 g firm tofu
2 tbsp tamarind paste
2 tbsp fish sauce
2 limes
1 tbsp coconut sugar
¼ cup crushed peanuts
1 cup bean sprouts
Fresh cilantro

Preparation

Step 1

Spiralize zucchini into noodles and pat dry with paper towels.

Step 2

Whisk together tamarind paste, fish sauce, lime juice, and coconut sugar for the sauce.

Step 3

Stir-fry shrimp and diced tofu in a hot wok. Add zucchini noodles and sauce, toss for 2 minutes.

Step 4

Top with crushed peanuts, bean sprouts, lime wedges, and fresh cilantro.
