2 cups heavy cream
1 cup whole milk
⅓ cup sugar
1 tsp vanilla extract
2 ½ tsp gelatin powder
2 cups mixed berries
2 tbsp sugar (for compote)
1 tbsp lemon juice

Preparation

Step 1

Bloom gelatin in cold water for 5 minutes. Heat cream, milk, sugar, and vanilla until just simmering.

Step 2

Squeeze excess water from gelatin and stir into the hot cream mixture until dissolved.

Step 3

Pour into ramekins or glasses and chill for at least 4 hours until set.

Step 4

Make berry compote by simmering mixed berries with sugar and lemon juice for 10 minutes. Spoon over set panna cotta.
