Ingredients

1 ½ lbs chicken breast
3 tbsp soy sauce
1 tbsp rice wine
1 tbsp rice vinegar
1 tbsp hoisin sauce
1 tsp sesame oil
1 tbsp cornstarch
10 dried chili peppers
1 tsp Sichuan peppercorns
½ cup roasted peanuts
4 scallions
3 cloves garlic

Preparation

Step 1

Dice chicken breast and marinate in soy sauce, rice wine, and cornstarch for 10 minutes.

Step 2

Mix sauce: soy sauce, rice vinegar, hoisin, sesame oil, sugar, and cornstarch.

Step 3

Stir-fry chicken in a hot wok until browned. Add dried chili peppers, Sichuan peppercorns, garlic, and ginger.

Step 4

Pour in sauce, add roasted peanuts and diced scallions. Toss until glossy and serve over rice.
