12 large sea scallops
3 tbsp butter
1 tbsp vegetable oil
1 lemon
Salt and pepper
Cauliflower puree (for serving)

Preparation

Step 1

Pat scallops very dry with paper towels. Season with salt and pepper.

Step 2

Heat a cast iron skillet until smoking. Add oil, then place scallops in the pan without crowding.

Step 3

Sear undisturbed for 2-3 minutes until a deep golden crust forms. Flip and cook 1-2 minutes more.

Step 4

Add butter to the pan and let it brown. Baste scallops with the brown butter. Serve on a bed of cauliflower puree with a squeeze of lemon.
