Ingredients

Number of people
1 whole chicken, cut into 8 pieces
1 bottle red Burgundy wine
200 g lardons
200 g pearl onions
250 g cremini mushrooms
4 cloves garlic
2 tbsp tomato paste
1 cup chicken broth
2 tbsp butter
Fresh thyme
2 bay leaves
Fresh parsley

Preparation

Step 1

Season chicken pieces with salt and pepper. Brown in butter and olive oil in a Dutch oven.

Step 2

Remove chicken. Sauté lardons, pearl onions, mushrooms, and garlic until golden.

Step 3

Add tomato paste, flour, then deglaze with an entire bottle of red Burgundy wine. Add chicken broth, thyme, and bay leaf.

Step 4

Return chicken, cover, and braise in a 325°F (165°C) oven for 1 hour. Garnish with fresh parsley.
