Ingredients

2 zucchini
2 bell peppers
1 red onion
1 can chickpeas
1 ½ cups couscous
1 ½ cups vegetable broth
1 lemon
Fresh mint
Fresh parsley
1 tsp cumin
1 tsp smoked paprika
2 tbsp harissa paste
½ cup yogurt

Preparation

Step 1

Toss zucchini, bell peppers, red onion, and chickpeas with olive oil, cumin, and smoked paprika. Roast at 425°F for 25 minutes.

Step 2

Prepare couscous by pouring boiling vegetable broth over couscous and covering for 5 minutes.

Step 3

Fluff couscous and stir in lemon zest, chopped mint, and parsley.

Step 4

Combine roasted vegetables with herbed couscous. Drizzle with harissa yogurt.
