Ingredients

400 g extra-firm tofu
3 tbsp green curry paste
1 can coconut milk
1 cup bamboo shoots
1 red bell pepper
1 Thai eggplant
Thai basil leaves
1 lime
2 tbsp coconut oil
Jasmine rice

Preparation

Step 1

Press and cube extra-firm tofu. Pan-fry in coconut oil until golden on all sides.

Step 2

In the same pan, cook green curry paste for 1 minute, then add coconut milk.

Step 3

Add sliced bamboo shoots, bell pepper, and Thai eggplant. Simmer for 15 minutes.

Step 4

Stir in fried tofu, Thai basil, and a squeeze of lime. Serve over jasmine rice.
